The Delmonico was a New York establishment that opened near Madison Square in 1876, right at the beginning of the golden age of the cocktail. It gained a reputation as one of the nation’s top fine dining establishments and the birthplace of the Delmonico steak. This cocktail was the house cocktail of this restaurant, combining gin and cognac, sweet and dry vermouths, and bitters in a way that’s boozy — but excellent.

  • 1 oz London Dry Gin
  • 1/2 oz Cognac
  • 1 dash Angostura Bitter
  • 1/2 oz French Vermouth
  • 1/2 oz Italian Vermouth
  • Garnish: Orange Peel

Stir all the ingredients with ice in a mixing glass. Strain into a cocktail glass and garnish with an orange peel or lemon peel.
